This savory dish is so easy to toss in your slow cooker in the morning and have dinner complete when you arrive back home! Add some rice and a steamed vegetable as pictured above and you have a complete meal!
Slow-Cooker Chicken and Mushrooms
3 Medium Chicken Breasts
1 Packet of Lipton Onion/Mushroom Soup Mix
1 Can of 98% Fat-free Cream of Mushroom Soup
1/4 Cup Fat Free Sour Cream or Greek Yogurt
2 Cups Fresh Mushrooms
Directions: Place frozen chicken breasts in slow cooker. Meanwhile stir together Onion/Mushroom Soup mix, Cream of Mushroom Soup, Sour Cream (or Greek Yogurt), and mushrooms. Pour this mixture over the chicken. Cook on Low for 6-8 hours.
Total Calories: 379 Carb=18g Prot=44g Fat=5.4g
Ellipse Tip: Another great side dish is a steaming baked potato. The mushroom mixture that covers the chicken in the slow cooker makes a great topping for a potato!

Slow Cooked Pork Tenderloin with Vegetables
3 Lb. Lean, Boneless Pork Tenderloin
6 Yukon Gold Potatoes
12 Large Carrots, peeled
1/2 Medium Onion, sliced
4 Cups Water
Directions: Season pork tenderloin with salt and pepper on all sides. Place tenderloin in slow cooker with 4 cups of water. Place potatoes, peeled carrots, and sliced onion in slow cooker on top of the pork. Season with a pinch more salt and pepper. If cooking pork tenderloin from frozen, cook on medium low heat for 7-8 hours. If cooking pork tenderloin thawed, cook on low heat for 4-5 hours or until meat is cooked thoroughly.

Chicken Noodle Soup
1 Package McCormick Slow Cookers Chicken Noodle Soup
3 Boneless skinless chicken breasts, cut into 3/4″ cubes
2 cups sliced carrots
1 cup sliced celery
1 cup chopped onion
5 cups water
1 cup uncooked noodles
Directions: Place chicken and vegetables in slow cooker. Mix Seasoning and water until blended. Pour over chicken and vegetables. Cover.
Cook 8 hours on LOW. Stir in noodles. Cover. Cook 10 minutes longer on HIGH or until noodles are tender.
Total Calories: 136 Carb=12g Prot=19g Fat=1.3g
Tiffany’s Tip: In a hurry? Throw your chicken in the slow cooker frozen with the rest of the ingredients. When you get home, take a fork and just shred the chicken up in the slow cooker before you add your noodles. The chicken is so tender by this time, that it just falls apart!
