Fun Fruit Salsa by Ellipse

Hi Everyone,
  With the holidays and holiday parties fast approaching, it is always a good idea to make sure that you arrive at your festivities with an appetizer that you can enjoy without the guilt!  This will help keep you on track towards your goals even during the holidays!  Here is a fun, colorful, and festive recipe that your friends and family will enjoy!
1   Papaya
1   Mango
1   Pineapple
1   Melon
½  Cup Diced Bell Pepper (any color)
½  Cup Diced Red Onion
2  Tbsp. Minced Chilis
¼ Cup Chopped Cilantro
1  Tbsp. Olive Oil
3  Tbsp. Lime Juice
     Salt to Taste
 Directions:  Mix together papaya, mango, pineapple, and melon with 1/2 cup each of diced bell pepper (any color), red onion, minced chilis, cilantro, olive oil, lime juice, and salt to taste.   Serve with whole grain chips or pita chips!

Stuffed Tomatoes by Ellipse

 With the holiday seasoning fast approaching, it is safe to say that you will be looking for new recipes to whip up when entertaining your guests or heading to a party!  This low-calorie and guilt-free recipe is sure to be a hit and it looks really festive! 

 Stuffed Tomatoes
24  Cherry Tomatoes
2   Cups Low-fat or Fat-free cottage cheese
4   Tbsp. Salsa
1   Packet of Starkist Mango Chipotle Salmon

Directions:  Wash, remove stems, and cut out insides of all 24 cherry tomatoes.  Turn all tomatoes upside down on a paper towel to dry while mixing other ingredients.  Purate 2 cups of cottage cheese in your blender.  When completely purated, add 4 tbsp. of salsa, and 1 packet of Salmon to mixture. Spoon these ingredients together.  Evenly disperse mixture into the 24 cherry tomatoes!

Serves: 6 (4 tomatoes per serving)
