Southwest Egg Muffins from Ellipse Fitness

Here is a fun breakfast with a little zest!  This is a great source of protein to start your day!  Enjoy!

Southwest Egg Muffins

1 Large Carton Southwest Egg Beaters

2 Large Eggs

1 Container Frozen Chopped Spinach, thawed & drained

1 Cup Jimmy Dean Turkey Sausage Crumbles

Add in other vegetables of your choosing: chopped green onions, diced mushrooms, colored peppers, etc.

 

Directions:  Preheat oven to 350.  Mix all ingredients together and bake in 6 large muffin tins for about 30-45 minutes.

 

Serves:  3 (2 muffins per serving)

Exchanges:  5 Extra Lean Protein, 1 Vegetable, 1 Fat
