Slow Cooked Pork Tenderloin with Vegetables
3 Lb. Lean, Boneless Pork Tenderloin
6 Yukon Gold Potatoes
12 Large Carrots, peeled
1/2 Medium Onion, sliced
4 Cups Water
Directions: Season pork tenderloin with salt and pepper on all sides. Place tenderloin in slow cooker with 4 cups of water. Place potatoes, peeled carrots, and sliced onion in slow cooker on top of the pork. Season with a pinch more salt and pepper. If cooking pork tenderloin from frozen, cook on medium low heat for 7-8 hours. If cooking pork tenderloin thawed, cook on low heat for 4-5 hours or until meat is cooked thoroughly.
