Slow Cooked Pork Tenderloin with Vegetables

Hi Everyone,

If you have a hectic schedule and just make it home in time for dinner to feed yourself and your family, then you know how convenient your slow cooker can be!  Check out this simple recipe that can be put in your slow cooker before you leave for work in the morning and be ready for you when you arrive home at night!

Slow Cooked Pork Tenderloin with Vegetables

3     Lb. Lean, Boneless Pork Tenderloin

6     Yukon Gold Potatoes

12   Large Carrots, peeled

1/2 Medium Onion, sliced

4     Cups Water

Salt/Pepper

Directions:  Season pork tenderloin with salt and pepper on all sides. Place tenderloin in slow cooker with 4 cups of water.  Place potatoes, peeled carrots, and sliced onion in slow cooker on top of the pork.  Season with a pinch more salt and pepper.  If cooking pork tenderloin from frozen, cook on medium low heat for 7-8 hours.  If cooking pork tenderloin thawed, cook on low heat for 4-5 hours or until meat is cooked thoroughly.

Serves:  6

Ellipse Tip:  If you prefer to make one shopping trip to the grocery store per week, stock up, and freeze your poultry!  This pork tenderloin can be put in your slow cooker frozen.  Simply extend your cooking time and/or temperature when cooking from frozen!

Appleton, WI. – Ellipse Fitness is pleased to announce they have named Nikki Smith, K-Bell Fitness Specialist. Smith, who has been with Ellipse Fitness since 2007, has previously served as a Fitness Coach as well as Fitness Director. K-Bell is a program she helped create in 2008.

Kettlebells are an old-school type of training that has recently increased in popularity. The benefits of a kettlebell workout are an increase in lean muscle mass, greater core strength and improved cardiovascular exercise, all in one workout. Given the technical expertise required to properly train with kettlebells, it was determined a new position was required to oversee continued development and growth of the program. According to Smith:

“I am thrilled with my new role and am ready for the challenge. The increase in popularity of kettlebells warrants additional attention. While we think our program is one of the best in the market, we want to stay ahead of the curve and continue to make it better.”

One of the main responsibilities in her new role will be certification of the 80 plus Fitness Coaches who work at Ellipse. Given the special nature of the program, they’re required to pass a special internal certification program if they want to teach the class. While the Aerobic Fitness Association of America (AFAA) offers a certification program, Ellipse Fitness has developed their own certification that goes into greater details. Fitness Coaches who wish to achieve the certification must complete a rigorous training course and pass a video test where they’re graded on the proper technique. Lisa Welko, President of Ellipse Fitness is looking forward to working with Smith to take the program to the next level.

Chicken and Asparagus

HI Everyone,

Here is a delicious recipe that is only about 10 minutes of prep time and 40 additional minutes of baking.  The thing that I love about this recipe is that the soup mixture that the chicken and asparagus is baked in offers great flavor to spread over a baked potato to complete your meal!

Chicken and Asparagus

1.5  Lbs. Fresh Asparagus Spears, halved

4     Boneless, Skinless Chicken Breast Halves

1/2  Tsp. Salt

1/4  Tsp. Pepper

1     Can Condensed Low-fat Cream of Chicken Soup

6     Tbsp. Low-fat Mayo

1     Tsp. Lemon Juice

1/2 Tsp. Curry Powder

4     Oz. Shredded Cheddar Cheese

Directions:  Partially cook asparagus by boiling for about 4 minutes so that asparagus is still crisp.  Place asparagus in an 8 X 8 baking dish that has been sprayed with release agent.  Place chicken in a skillet; brown on both sides over medium heat.  Season with salt & pepper; arrange chicken over asparagus.

In a bowl, combine soup, salad dressing, lemon juice, and curry powder; pour over chicken.  Cover and bake at 375 degrees for 40 minutes or until chicken is done and tender.  Sprinkle with cheese; let stand 5 minutes before serving.

Serves:  4

Total Calories: 320   Carb=14g Prot=44g Fat=10g

Tiffany’s Tip:  Make sure that you do not over-cook the asparagus when you are boiling it or it will become mushy when baking.
